Here's a picture of the special dinner I made Steve for Valentine's Day. The power came back on just time, saving him from having a peanut butter and jelly sandwich and chips.
It's a pan seared Mahi Mahi with a white wine tomato alfredo sauce over angel hair pasta mixed with broccoli, cauliflower, squash and carrots. Not too shabby, eh? Much cheaper than a four star restaurant too!
I tried so hard to make Steve's birthday special. It didn't help that he didn't really want anything. He wants a new suit, but I can't just buy him one. That's something we have to do together.
I have been indoctrinated by my mother that you must have a present to open and a cake on your birthday. You just have to. So I went out and bought him season 2 of The Office and an ice cream cake from Cold Stone Creamery. Then I came home to make him a special birthday dinner. Because he's the love of my life and I want to show him how much I love him and how special he is.
Dinner consisted of Rachael Ray's 10 second snacks and Spinach and Feta Cheese Bites. I actually cooked with phyllo dough and the recipe turned out. That stuff has always intimidated me. I only took one chunk of flesh out of my finger too. Don't worry, I found the chunk. It wasn't in the food or anything. I'm thinking of actually trying my hand at Baklava since I have more phyllo dough in the freezer. I'm crazy like that.
Of course, I had one child that decided to be irresponsible about a school project. I received a wonderful *insert sarcastic tone here* e-mail from her teacher informing me that this project that she conveniently lost counts for 25% of her grade this quarter. Ugh. So insert lecture about responsibility, scrambling to find said project papers, last minute completion of project, whining that project is too hard, more lecturing about responsibility. What happened to last year's straight A student?
Luckily an episode of Celebrity Jeopardy was enough to make us laugh and destress after all the homework angst. It truly was like an SNL sketch. Then add to that snuggling under my favorite quilt while watching Heroes. Not such a bad birthday after all, at least I hope Steve thinks that.
So I didn't get a thing accomplished today. I walked around a mall, had lunch, came home and made chicken nuggets, french fries and corn for dinner. Oh, wait! I did accomplish something! I discovered my new favorite drink at Starbucks and I thought it up myself. Although, it's so simple any idiot could think it up. A green tea latte with raspberry syrup. Way yummy. And I got free panties at Victoria's Secret and I didn't feel the need to buy anything else just to ease my guilt. Nope, just got the panties. Wow, I've really come a long way. Heh.
